Sweet Vermicilli 

Ingredients

⇒   200 grams vermicilli (seviyaan ) thin and roasted
⇒   350 ml milk
⇒   1 pinch saffron strands (optional)
⇒   200 grams sugar (1 cup )⇒   1/4 th tsp cardomon powder (elaichi powder)⇒   1 or 2 drop kewra essence (optional)⇒   almonds 2 tbsp (badam)⇒   pistachio nuts 2 tbsp (pista)⇒   raisins 2 tbsp (kish mish)⇒   cashewnuts 2 tbsp (kaju)

Method

⇒   Heat ghee in a pan and fry chopped dry fruits for just a minutes..once they get golden remove in a plate.

⇒   In same ghee add the seviyaan and roast for 2 to 3 minutes on low medium flame

⇒   Then add milk in 3 to 4 batches. (Do not add all milk at once)

⇒   Keep mixing on low flame till all milk is absorbed into the seviyaan.

⇒   Then add  sugar and cardomon powder.

⇒    keep mixing gently on low flame till all sugar is melted

⇒   Then cover lid and simmer for 5 minutes.

⇒   open and mix once in between.

⇒   Once vermicilli is nicely cooked add the fried chopped nuts and kewra essence (one drop)

⇒    mix everything well

⇒   If vermicilli looks dry and hard sprinkle little milk or water and simmer 2 to 3 minutes again

⇒   Sweet seviyaan is ready to be served. u can serve with malai also..
